工艺设计
摘要
榨菜加工在我国已有上百年历史,以涪陵榨菜为代表的重庆榨菜更是享有世界美誉,其产品以独特的盐脱水加工工艺和鲜香嫩脆的风味特点超群卓立于世界酱腌菜行业之林,深受国内外广大消费者喜爱。本设计结合目前国内外榨菜市场的发展形势,设计了一套完整的年产量10000吨的方便榨菜生产线,本设计以方便榨菜工厂工艺设计为重点,其中以车间工艺设计为主,同时对辅助部门作相应的各种要求和提供相关数据,作为非工艺设计的依据。本设计分析了榨菜行业的现状、存在问题及发展前景。对榨菜生产工艺进行了论证和选择,完成了榨菜的物料计算,榨菜生产装置等设备选型计算,对电、汽用量进行了估算。对能造成环境污染的废气废水废渣进行了三废处理。对榨菜生产车间工艺布置进行了设计,对车间建筑、采光、通风、卫生设施提出了要求。P质量控制体系,对仓库、原料接收站、化验室等部门进行了初步设计。利用计算机绘制了工厂相关设计图纸。

ABSTRACT
The pickled mustard tuber processing have over a hundred years’ history in our country, the world good reputation take the Fuling pickled mustard tuber as representative's Chongqing pickled mustard tuber. Its production stands erect outstanding by the unique salty dehydration processing craft and the fresh fragrant tender crisp flavor characteristic forest in the world sauce pickles depth is liked by the domestic and foreign general consumers. With the rapid development of Chinese economy, particularly the life rhythm accelerate prompted people has changed the traditional way of life, as people increasingly reluctant to spend more time in the kitchen, a new generation of consumer groups are growing in Numbers, make more and more convenient food keep good momentum, and convenience foods will account for half of China food market status. In the bines the current situation of domestic and international market development hand been hand designed plete set of annual output of 10,000 tons of mustard site selection hand been choosen as an adequate supply of raw materials, the world reputation of the town of Fuling mustard where there are plenty of raw materials, convenient are all ensure the production and sale of mustard.
