摘要
餐饮建筑类型是大家熟知的建筑类型,介绍餐饮空间设计的书籍很多,规范
介绍的也很全面。《建筑设计资料集》中对餐厅的组成、面积指标及规模、餐厅的
空间布局等方面做出了详细的说明。而如何设计具有地方特色的餐饮建筑空间,
就这方面进行研究具有较强的现实意义。
要了解湖南餐饮建筑首先要了解湖湘文化。湖湘文化首先是一种观念文化、
精神传统。湘菜是全国八大菜系之一。以其油重色浓突出,尤以酸、香、鲜、辣
见长。湖南人性格刚烈、倔犟、刚劲、务实,有着敢为人先的实学风格和拼搏精
神。同时湖南当地的民间建筑造型和功能也颇具地方特色。
湖湘文化、湘菜、湖南传统民居作为中国传统文化的一部分,因其独特的风
韵独树一帜。湖南独特的地理环境以及独特的文化氛围造就了其独特的餐饮建筑
空间。希望通过图片和文字资料,从湖湘文化在餐饮建筑中的运用出发,借助功
能分析,并以湖南传统建筑特色在餐饮建筑中的应用为切入点。
研究方法中,运用实地考查、文献阅读、互联网、实例分析的方法。从餐饮
建筑的功能出发,以传统的造型规律的理论为基础,借助符号学理论,以餐饮建
筑的使用功能为主线,揭示湖湘文化在长沙地区餐饮建筑中的体现。
本文希望通过对湖湘文化、湘菜特点以及湖南传统民居中基本部分的研究,
能够概括的叙述三者对长沙地区餐饮建筑设计的影响。

Abstract
The restraurant design is the construction type which everybody knew very well
and restraurant design book is very many. The standard introductionvery is also
comprehensive."Architectural design Materials Collection" has made the detailed
explanation on position, area target, scale, restraurant spatial layout
and etc. But how to design the place has area characteristic on restraurant space, the
research on this aspect has the stronger practical significance.
Want to kown the restraurant of first we needs to understand the
Hunan first the Hunan culture is an idea culture and a Spiritual
Hunan cuisine is one of the national main cuisine, Is well-known by its
heavy color, fragrant, fresh and Hunan person’s disposition is staunch,
