摘要
表面活性剂是重要的工业助剂,素有"工业味精"之称。表面活性剂具有既亲水,又亲油,但又不是整体亲水或亲油的特性,依靠这种独特的两亲性结构而具有降低表面张力、起泡、乳化、分散、润湿、增溶、渗透、抗静电等性能,在各种工业和消费者应用中有重要的地位,目前已被广泛应用于洗涤、制药、食品、化妆品、石油化工、纺织、金属加工等领域。本文主要阐述了表面活性剂的性质、分类及其在各个领域的应用,同时也对表面活性剂的发展趋势作了展望。

Abstract
Surfactant, an important kind of industrial additives, is called as industrial monosodium glutamate. surfactant has both hydrophilicity and lipophilicity, but not the overall hydrophilic or lipophilic properties. relying on this unique amphiphilic structure with lower surface tension, foaming, emulsifying, dispersing, wetting, solubilizing, permeability, static and other properties, surfactants has an important role in various industries and consumer ,surfactant is widely used in the field such as detergent, pharmaceutical industry, food, cosmetic, petroleum and chemical industry, textile pharmaceutical industry and metalworking. this article mainly describes the property, categorization and application of the surfactant,the development of surfactant is also forecasted.

第1章前言
表面活性剂(surfactant),是指具有固定的亲水亲油基团,在溶液的表面能定向排列,并能使表面张力显著下降的物质。表面活性剂的分子结构具有两亲性:一端为亲水基团,另一端为憎水基团;亲水基团常为极性的基团,如羧酸、磺酸、硫酸、氨基或***基及其盐,也可是羟基、酰***基、醚键等;而憎水基团常为非极性烃链,如8个碳原子以上烃链。表面活性剂分为离子型表面活性剂和非离子型表面活性剂等。
