红酒中微量金属元素的测定研究
摘要
红酒是一种滋味美好的饮料,其中含有糖类、无机酸、果胶质、微 量元素及几十种氨基酸等人体所需要的营养物质,具有很高的营养价值 和保健作用。但是红酒中的微量金属元素过量会对人体造成一定的伤 害。因此,建立测定红酒中微量元素含量的方法非常重要。
本文使用直接蒸发、直接消解、高氯酸-硝酸混合消解、双氧水-硝 酸混合消解等多种红酒预处理方法,采用火焰原子吸收法测定了红酒中 的Pb、Cr. Cu、Fe四种元素的含量。实验得出以下结论:Cr、Fe、Pb、 Cu含量依次减少;采用双氧水-硝酸混合消解方法的精密度(RSD)及 加标回收率在四种消解方法中最为准确;直接蒸发方法预处理酒样时, 蒸发温度为70°C所得结果精密度(RSD)和加标回收率较好。

The Research and Determination of Trace Metal
Elements in Red red wine
Abstract
Red wine is a taste good drink, which contain carbohydrates, inorganic acid, pectin, trace elements and dozens of amino acids and so on, all these are the necessarily nutrients for the human body. So red wine has high nutritional value and health care function. But excessive trace metal elements in red wine can cause certain harm to human body. Therefore, establishing a method to determine the trace elements content in red wine is very important.
In this paper, a variety of red red wine pretreatment method (direct evaporation, direct digestion, high chlorine acid-nitric acid hybrid digestion, hydrogen peroxide -nitric acid hybrid digestion)had been used. Flame atomic absorption method is applied to study and determine the Pb, Cr, Cu, Fe element content in red experiment draws the following conclusions: The content of Pb, Cr, Cu, Fe is progressively less; The hydrogen peroxide-nitric acid hybrid digestion method's experimental results are more accurate of all the methods; When the evaporation method of liquor samples pre treatment are adopt, the results of 7?C is precision and the recovery results are good
