引 言
“快餐〞一词是20世纪80年代进入中国的外来语，英文“fast food〞，在台湾，香港等地被译为速食，它表达了省时、方便、经济的特点。为了区别于来自美国等西方国家的西式快餐，我们把中国的快餐称为中式快餐〔Chinese fast food or Chinese-style fast food〕，,中式快餐又有现代快餐和传统快餐之分。
现代快餐是相对于传统快餐而言的，我们这里讲的中式快餐指的是现代快餐。传统快餐店大部份属于个人所有或由小单位经营，较低的资金投入，雇佣家庭成员，简单的法律申请程序即可开业。依赖劳动密集，现场制作和现场展示，使用简单的技术，很少使用市场营销技术。而现代快餐在传统快餐根底上进行了长足的开展，并能够吸取了西方的快餐企业的复制扩，张连锁经营，标准生产等优点，形成了更加快捷，标准，和模式化的开展方向，
现在快餐成为群众的生活必不可少的一局部。近年来快餐在中国开展迅速，为消费者带来了方便快捷的生活方式。
