一、绪论
贵州惠水黑糯米酒,又称紫糯米,栽培历史悠久。据?定番州志?记载,从宋代起即为历代地方官府向皇帝进贡的“贡品〞,是御餐中的珍品。当地农民传说,这是宋代的一位苗王,名叫黑阳大帝,是他首先发现的。
黑糯米酒不同一般,它是布依族用当地的特产黑糯米为原料,用布依族代代相传的古老方法酿制而成的低度美酒。过去布依族虽把它作为待客的上品,但从未把酿制的方法向外族人传授。直到1979年贵州省惠水县酒厂才开掘出这一珍贵品种。在收集整理此酒古老的酿制方法后,再结合现代酿酒工艺,反复研制,酿制出风格独特的黑糯米酒。1983年被评为“贵州名酒〞。
贵州黔南惠水县是中国黑糯米之乡·当地的黑糯米酒选材全部选自当地优质的黑糯米,经过独特的布依族酿造方式,产出的黑糯米酒别有一番风味。
新中国成立以后,黑糯米酒以其深厚的文化底蕴和卓越的品质受到了广阔消费者的垂爱,古老的惠水黑糯米酒焕发出了新的生机与活力,获得了长足的开展。1980年以后,我国的酒行业进入了高利润、高增长阶段,到20世纪90年代出现了剧烈的市场竞争,企业利润下降,大批企业陷于困境,从2000年开始,我国酒类市场峰回路转,生产全面上升,但惠水米酒企业技术水平低,营销能力弱,在与外省黑糯米酒企业的竞争中处于劣势,这无疑是遏制惠水黑糯米酒产值的一个重要因素,其产值却偏低。为了使贵州永红厂有效地参与市场竞争,拓展市场空间,提高产值而制定了本次营销筹划方案
