壳聚糖涂膜在鲜切果蔬保鲜中的应用
摘要鲜切果蔬是指新鲜果蔬原料经预处理、清洗、切分、保鲜、包装和贮藏等多道工序制成的不影响其鲜活状态的一种制品。它具有天然、营养、食用方便等特点,符合当下快节奏的生活方式,广受人们喜爱。但是由于切分造成的机械损伤,鲜切产品易出现一些不利保鲜的生理生化反应。壳聚糖是一种来源广泛的生物大分子材料,安全、无毒、并具有良好的成膜性和生物相容性,将壳聚糖涂膜应用于鲜切果蔬的保鲜,能够起到抑菌、抗氧化、防褐变等作用,从而达到保鲜目的,延缓商品品质下降,保持商品价值。

Application of Chitosan Coating in Preservation of Fresh-cut Fruits and Vegetables
Abstract Fresh-cut fruits and vegetables is a kind of product made of fresh fruits and vegetables, which are processed, cleaned, cut, fresh, packaged and stored without affect its freshness。It’s Natural, nutritional and convenient to eat. In today's fast-paced life of it has e a trend. Because of the mechanical damage caused by the segmentation, the fresh-cut products are prone to some adverse physiological and biochemical reactions. Chitosan is a source of a wide range of biological macromolecular 's safe , non-toxic and has good film forming properties and patibility. Applied to the preservation of fresh cut fruits and vegetables,the chitosan coating could be antimicrobial, be antioxidant and anti browning effect, so as to achieve purposes of preservation , slow the decline in the quality of goods and maintain the value of the goods.
