燕山板栗和太行山板栗品质差异的研究

摘要:主要研究燕山山区与太行山区相同品种板栗品质的差异,为今后板栗的加工利用、贮藏、收购、
种质资源选育及科学管理提供理论依据。采用多元方差分析,从外观品质、营养品质和风味品质对燕
山板栗和太行山板栗品质的差异进行研究。结果表明,早丰和板红与当地的实生栗间品质差异不显
著;燕山地区和太行山地区的板栗品质间存在显著差异,主要表现在燕山组的板栗单果重、还原糖、矿
质元素 Zn,Cr 含量明显低于太行山组,而燕山组栗果中的蛋白质、矿质元素 P,Cu 含量明显高于太行山
组。燕山地区和太行山地区早丰和板红的品质间在单果重、还原糖、蛋白质、矿质元素 Zn,Cr,P,Cu 含
量方面具有显著差异。
