摘要
在黄酒中加入药食两用的物料,能使中草药在黄酒酿造过程中参与糖化和发酵,产生独特的功能与风味。为开拓黄酒在女性中的消费市场,有必要研究黄酒在美容抗衰老方面的功效。本实验在黄酒酿造的过程中加入珍珠,得到抗氧化能力最好的珍珠粉浓度1%。再将此浓度的珍珠黄酒与常见中草药黄芪进行勾兑,得到珍珠黄芪黄酒。在测定它的抗氧化能力之后发现,添加了珍珠与黄芪的黄酒的抗氧化能力比单纯的黄酒的抗氧化能力要强。

ABSTRACT
Adding medicinal and edible materials into rice wine, it can make Chinese herbal medicine participate in harification and fermentation during wine brewing process and then result in special function and flavor. In order to explore rice wine consumer market in female field, it is necessary to study its function of being beautiful and anti-aging. In this experiment, the researcher added pearls into the wine during brewing process for getting 1% concentration of pearl powder which has the best antioxidant capacity. The blending of this pearl rice wine mon herbs of astragalus can be formed pearl astragalus wine. After the determination of its antioxidant capacity, the researcher found that the rice wine adding pearls and astragalus has stronger antioxidant ability than the simple rice wine
