摘    要:
作为世界第二大食用菌, 香菇富含多种营养素, 味道鲜美、营养丰富。但是, 由于自身生长代谢的需要和后期人为添加的因素, 使得香菇中含有一定量的甲醛, 超额的甲醛含量残留对香菇的食用安全会产生一定的影响。综述香菇中的营养成分及其效用, 并重点阐述了香菇中甲醛含量检测的进展情况, 为今后香菇质检提供相关参考。

Research Progresses on the Nutrition Value of Letinous edodes and Detection of Formaldehyde Residue

Abstract:
As the second largest edible mushroom in the word, Letinous edodes is rich in many nutrients, and pharmacological value. However, due to the metabolism in the growth process and processing methods, there are formaldehyde residue in Letinous edodes, threatening human health. The ponents and its effects of letinous edodes were reviewed, and the detection of formaldehyde residue in letinous edodes were mainly presented, providing reference for the quality control of letinous edodes in the future.
