摘要
随着社会的发展,人民生活水平的提高,清真食品以其“绿色、纯净、无污
染”的优良品质和富有特色的饮食文化内涵迎合了现代人对健康食品的新需求,
清真食品的市场需求在日益扩大,清真食品行业面临着新的发展机遇。如何进一
步挖掘和发扬清真食品所蕴涵的清真文化,如何使传统的家族式清真食品企业稳
步推进改革,建立现代企业制度,实现科学管理,走上产业化发展的轨道,是当
前民族工作的关注点之一,也是本论文的主要研究方向。
本论文以辩证唯物主义原理为指导,运用民族学田野调查的方法,通过在个
案地点——河南省驻马店市十三香集团进行深度参与观察、访谈、问卷调查等方
法获取了第一手资料;并且查阅了一定的历史文献和运用历史学的文献法,查阅
学术界已有的相关成果及相关资料,结合经济学原理和企业管理等方面的理论来
分析研究清真食品产业化发展。
本论文全面阐述了清真食品行业发展的重要意义,认真分析了清真食品行业
发展的现状,在前人研究的基础上,经过深入思考、全面调研,得出研究结论:
清真食品要实现行业化发展,必须坚持“以产品质量为中心,建立现代企业制度
为基础,强化成本管理,不断创新谋发展,建设企业文化增强核心竞争力,正确
利用法律法规为企业发展保驾护航”。

我国清真食品企业产业化研究
Abstract
With the social development, improvement of living standard, halal food in its
"green, clean, no pollution," the fine quality and distinctive food culture of the
modern connotation of health food products to meet the new demand, market demand
for halal food In the increasingly expanding halal food industry is facing new
development opportunities. How to further explore and develop the implication of the
Muslim halal food culture, how to make traditional family halal food business steadily
promote reform, establishing a modern enterprise system, scientific management,
industrial development onto the track, is the current focus of national work , is one of
the main research directions in this paper.
This paper to guide the dialectical materialist theory is, the use of ethnological
fieldwork methods, through the Geandedian - Henan Zhumadian Shishisanxiang
Jituanjinxing Shendu participatory observation, interviews and questionnaire methods
to obtain a first-hand information; and access to some historical documents and the
use of history of literature, academics have access to the relevant results and related
information, combined with economics, business management, principles and theories
to analyze the development of halal food industry.
Fully described in this paper the development of halal food industry, the
impor
