云南省连锁餐饮业竞争力综合评价及其应用研究

摘要
近年来,餐饮业作为传统服务业之一得到了快速的发展,餐饮业发展水平关
系着一,进而影响着一个。餐饮业中的连锁餐
饮业由于自身的优势,也越来越受到人们的关注。时下全国各级政府纷纷出台了
相关的促进餐饮业发展的优惠政策,这为连锁餐饮业发展提供了契机,如何提升
连锁餐饮业竞争力成为了我们应该不断思索的发展餐饮业的重要的问题。近几年
来,云南连锁餐饮业的发展取得了长足的进步,为国民经济的迅速崛起也做出了
贡献,但也存在一些问题。本文写作的目的就是想通过应用相关竞争力理论、主
成分分析法来了解云南省连锁餐饮业的发展情况,比较各地连锁餐饮业发展的不
同,并提出相应的对策建议。
全文共分八个部分,分别是:第一部分主要介绍本文的研究背景、意义、方
法以及国内外针对连锁餐饮业研究现状的文献综述;第二部分介绍了本文所应用
的产业竞争力理论基础及溯源,从产业及产业竞争力的定义、内涵,产业竞争力
理论基础,主要产业竞争力理论概述,产业竞争力理论评述等几个方面详细论述
产业竞争力的研究成果;第三部分明确界定餐饮业、连锁餐饮产业、连锁餐饮产
业竞争力等概念,分析连锁餐饮产业竞争力的内涵和其独有的特点;第四部分根
据 2008-2009 年《中国零售和餐饮连锁企业统计年鉴》、2009-2010 年《中国商
务年鉴》、云南省统计局网站等资料,在分析云南连锁餐饮业的基本现状的基础
上,试着归纳出云南省连锁餐饮业目前的现状和所具有的特点;第五部分从评价
指标体系的设计、影响因素、主要研究方法及应用等几个方面入手,构建了连锁
餐饮业竞争力指标体系,为实证研究提供依据,同时通过该体系并简要分析各因
素对竞争力的影响;第六部分为实证研究部分,根据已构建的连锁餐饮业评价指
标体系,选取部分重要省、市做主成分分析;第七部分在实证研究分析结果的基
础上,探究云南省连锁餐饮业发展的道路并为云南连锁餐饮业的发展提供可行性
的建议和意见;第八部分对全文进行总结。

Abstract
Recently, the catering industry, as one of traditional service industries, has
developed rapidly, to some degree it is related to the consumption of a country, thus
affecting economic development of a country. Chain catering industry as a major
sub-industry, has drawn more and more attention due to its advantages. The whole
country has already been issued relevant policies of great support for developing
catering industry, which afford catering enterprises many opportunities, then how
to promote this industry'petitiveness es a major issue. In recent years,
Yunnan's chain catering industry has developed soundly, contributed to Yunnan's
economy as well, but there still exists some problems. The purpose of this thesis is to
understand the developmental situation of Yunnan's chain catering industry, and
offer some feasible suggestions for better development of chain catering industry by
applying petitiveness theories and ponent analysis, in
