摘要:光谱图像技术正越来越多地应用于肉品检测中。从光谱成像系统分类上讲已应用推帚
式与面成像式;从成像波段上主要集中在从可见/近红外到短波近红外范围;从检测方式上
分从平均指标预测发展到指标的空间分布预测;在检测类型上已包含定性分类到定量预测。
光谱图像技术在肉品质量与安全的快速无损检测方面正发挥着越来越重要的作用,未来在现
场进行肉品多指标综合检测方面具有很好的发展前景。

Abstract: Spectral imaging are increasingly being used for the inspection of meats. Push-broom
and area imagers have both been used from the perspective of spectral imaging equipment. First
visible, later visible/near infrared, and now more work on short-wave near infrared were done as
to the spectral ranges on which the spectral images were acquired. From the early estimation of an
averaged value of a sample to the recent quantitative prediction of spatial distribution of attributes,
this technology has prooved itself for the qualitative and quantitave inspections of various meat
products. Yet, the near future are to witness its rapid, non-invasive and on-field applications for
multiple indices of meat products.
