文档介绍:大连理工大学硕士学位论文摘要 n,B一不饱和羰基结构是防腐剂发挥抗菌作用的功能基团,富马酸酯即是一种含该官能团的广谱、高效、低毒的抗菌防腐剂。本课题的目标是研究出以富马酸为母体进行酯化,合成高效、广谱、低毒并且低致敏性的食品抗菌防腐剂。采用马来酸酐为原料、以无水AICI。为异构化剂、经酯化、异构化合成了富马酸单酯。考察了酯化温度、异构化温度、异构化剂、时问以及提纯试剂对产物的影响。富马酸单丁酯(MBF)%,富马酸单环己酯(KHF)%。经Ms和1H_NMR 等现代仪器分析,确定了富马酸单酯的分子结构。单酯再经过酰氯化与酯化,合成了富马酸不对称双酯如富马酸丁甲酯(跚F)。富马酸环己甲酯(c哪F)。考察了酰氯化的原料比、反应时间、氯化亚砜对富马酸不对称双酯的影响。经分析:%。对富马酸双酯进行合成,%,CleF(富马酸环己甲酯)%。经‘H_嘲R等仪器分析,确定了富马酸不对称双酯的分子结构。考察了MBF、BMF、McHF、C咖F对牛奶酸败菌的抑菌效果。结果表明:它们均是高效的防腐剂,在pH3—9范围内都呈现强抗菌活性,在相同用量的条件下抑菌效果远高于目前常用的富马酸二甲酯(DMF)。几种防腐剂在不同的条件下抑菌效果强弱排列为:MCHF >CHMF>MBF>BMF。热稳定性研究表明:BMF、CHMF经高温处理后其抑菌能力无明显降低。皮肤试验证明:MCHF、CHMF比富马酸二甲酯对皮肤产生刺激、过敏作用小很多,消除了富马酸二甲酯在应用过程中遇到的最大障碍。故在食品防腐保鲜中有广泛的应用前景,是一种高效的新型防腐剂。关键词:防腐剂;合成;a,13一不饱和羰基结构;富马酸酯;抑菌能力 I 富马酸酯类防腐剂的合成与抗菌性能研究 Peparation ofFumarate asAntiseptic and theAntibacterial Effect Abstraet a,p—unsaturated carbonyl isregarded as all effective group ofantimicrobial activity.
