(二)采后流通
中国水果流通体系在以大型农产品批发市场为中心，城乡集贸市场为依托的中国市场网络中，是重要的组成部分。2005年中国亿元以上的农产品专业市场数量为599家，其中专业市场482家，占80%。这样一个水果流通体系，相对于中国的663个城市和近2400个市、县级行政区划来说，显然在数量上并不多。从市场的实际交易情况看，2005年，。市场成交的干鲜果占总产量的比例约为80%，占总产量20%的果品未能转化为商品。
中国水果的销售大多数靠个体户。水果贩运大户一般委托产地收购，收时往往报个价格，提出果径要求；而且一般都是收好水果，再租用社会闲散车辆，运往大城市和特大城市的批发市场。这样，水果运销大户，便把果农生产的水果从收购到运输到批发，从产地到销地都联系了起来。近年来，由于铁路经营机制不灵活，越来越不适应水果这种鲜活产品的销售，水果运输越来越以汽车运输为主了。批发市场内的交易，目前还是以自由交易为主，运销大户将卡车开进批发市场内，主要批发给超市、个体果贩。不同层次的消费者再到超市或果贩处购买。也有部分消费者直接在批发市场内以批发价购买水果。水果的成交价，也就在批发市场的交易中通过协商决定，价格时刻受到供求关系的影响。
