第二节 食品添加剂的使用要求与卫生管理 the using demand and heath management
一、食品添加剂的使用要求 (using demand )
1．食品添加剂应该是无毒无害的(innocuous and unpoisonous )
各种食品添加剂必须严格按《食品安全性毒理学评价程序与方法》（GB15193-94），证明其在使用限量范围内长期使用对人体安全无害，或国外使用的依据充分证明其无毒无害，也不应有其它有毒杂质。
无毒无害亦是指经加工、烹调后，可被破坏、分解成无毒的物质或参加机体正常代谢，但不产生有害的物质或直接排出体外。

2．不破坏食品的营养成分，不影响食品的感官性状，对食品的质量及风味不发生不良影响。(It does not destruct the nutrient component of food , does not affect the sensitive character of food , does not influent the quality and the taste of food.)
3．应是使用最低剂量，而达到提高食品质量的显著效果。(It can achieve to the most significant effect in improving the food quality by using lowest dose.)

4．不得用来掩盖食品的缺陷或作为伪造手段，粗制滥造 , 欺骗消 费者. (It can’t be used to cheat customer by using it to cover the defection of food or to fabricate . )
异味蛋糕：以黄色素代替鸡蛋，糖精代替沙糖，化肥（碳
酸铵、硫酸铵）代替小苏打，所制蛋糕氨味浓，故称为异味蛋糕。
