生鲜猪肉物流品质变化研究*

【摘要】运用色差法快速检测各种物流模式下生鲜猪肉的品质(挥发性盐基氮含量)变化,结果表明热鲜肉
物流品质变化很快,冷却肉物流品质变化较小,而真空包装冷却物流品质变化最小。因此,生鲜猪肉应采用低温物流的
形式,其中以真空包装冷却肉的物流品质最好。

Study on the quality changes of fresh pork under the logistics modes

【Abstract】The quality (TVBN) changes of fresh pork under the logistics modes are detected by chromatic
aberration. The results show that the logistics quality of warm pork changes quickly, and the logistics
quality of chilling pork changes slowly, while the logistcs quality of chilling pork with vacuum package
has least change. The low temperature logistics of fresh pork is mended, and the quality would be
best kept in the chilling pork logistics with vacuum package.
