【内容提要】食品是指各种供人食用或者饮用的成品和原料,以及按照传统既是食品又是药品的物品,但不包括以治疗为目的的物品。随着经济的全球化,食品卫生与安全成为备受关注的热门话题。近几年来,世界上一些国家和地区食品安全的恶性事件不断发生,随着食品加工过程中化学品和新技术的广泛使用,新的食品安全问题不断涌现。尽管现代科技己发展到了相当水平,但食源性疾病不论在发达国家还是发展中国家,都没有得到有效的控制,仍然严重地危害着人民的健康,成为当今世界各国最关注的卫生问题之一。因此,就食品安全问题本身的严峻性而言,重视并大力解决好这一问题依然迫在眉睫。

Abstract
【 abstract 】 food refers to all for people to eat or drink of finished goods and raw materials, and the traditionally served as both food and medicament, but does not include items for medical purposes. With the globalization of economy, food hygiene and safety e much-talked-about hot topic. In recent years, some countries and regions in the world of food safety, vicious incidents happening with food processing process chemicals and the widespread use of new technologies, new food safety problems emerge. Although modern science and technology has developed to quite level, but food-borne diseases whether in developed countries and developing countries, have not been controlled effectively, and still seriously endangering people's health, e world one of the most attention health problems. Therefore, it is food safety problems concerned, pay attention to the austerity of itself and strongly solved this problem still is imminent.
