摘要
啤酒生产是我国的一个传统产业,随着国民经济的发展和人民生活的改善,我国啤酒工业也得到了空前的发展。啤酒发酵过程是啤酒生产过程中的重要环节之一,从原料到发酵过程,如何控制好温度,压力,让发酵满足总生产工艺曲线,决定了啤酒的生产质量和生产效率。因此,本文以啤酒发酵过程为工程背景,利用PLC实现对啤酒发酵过程温度的控制。为节约能源,减少生产成本,同时满足控制要求,发酵罐的温度控制采用检测发酵罐的上、中、下三段的温度,通过调节上、中、下三段冷媒电动阀来实现发酵罐控温的方法。由于啤酒发酵对象具有时变性、时滞性以及不确定性,决定了发酵罐温控须采用特殊的控制算法系统。该系统性价比高、可靠、技术先进,能完全满足啤酒发酵工艺的技术要求。

Abstract
Beer production is one of traditional industry in our country. With the development of civil economy and the improvement of people’s living condition, beer industry has also been rapidly fermentation is one of the key steps of beer production. From raw material to the fermentation process, how to control the temperature, pressure, and make full of the total fermentation technology curve, determines the production quality and production efficiency of beer. Thus, this thesis is on the basis of some fermentation projects in breweries to control the fermentation temperature of the whole process by PLC. To save energy, reduce production costs and meet the requirements of control, temperature control of fermentation tank adopts the detection of the three paragraphs of the temperature of the fermentation tank, through the upper, middle and lower imports of refrigerant in three motor-driven valves to achieve fermentation tank temperature control. As a result of beer fermentation at the time-varying, time-delay and uncertainty, it determines the fermentation tank special control algorithm must be used. The system performance higher than price, reliable, advanced technology, fully meets the fermentation process of beer production technology requirements.
