摘 要
随着食品检测技术的进步和人民生活水平的提高,食品质量安全问题日益受到人们的关注。如何有效的保证食品质量安全已经成为中国乃至世界的重要课题,建立和完善食品安全追溯系统,是解决中国食品安全问题的一个快速、有效的手段。
基于物联网的食品安全追溯系统主要包括中央追溯管理平台、城市追溯管理平台、食品生产加工追溯子系统、仓储运输追溯子系统、批发市场追溯子系统、集贸超市追溯子系统。本文就食品安全追溯系统中的重要环节一一集贸超市追溯子系统进行研究。
集贸超市追溯子系统主要由溯源电子秤、WiFi数据传输网络、系统数据库及其管理系统组成。子系统采用主动溯源的方法,利用溯源电子秤将追溯信息扩展到了每个消费者,彻底完善了整个食品安全追溯系统的信息体系。一旦食
品出现质量问题,消费者和政府监管部门可以方便地查询产品信息,从而实现
及时地、有针对性地召回和销毁问题食品的目的。
本文首先就食品安全追溯系统的原理做了简单的介绍,包括基于WiFi的溯源电子秤以及主动溯源方法等。其次,根据系统的需求分析,给出了其整体结构,提出采用C/S与B/S混合模式对系统进行开发,即在集贸超市追溯子系统内部采用C/S体系架构,而在其与上层追溯管理平台的数据共享模块中采用B/S 体系结构。完成了系统基于WiFi的网络化设计,并通过调研和建模分析,对子系统的两个主要应用场所一一超市和农贸市场的操作流程进行了建模,实现对追溯信息来源和去向的分析和控制。再次,对集贸超市追溯子系统的网络通信进行了研究和验证,制定了网络通信帧以及数据共享接口标准和数据上报规范, 并对系统的网络拓扑图以及主要性能指标进行了验证。最后,设计了系统的数据库及其管理系统。为了满足系统数据的安全性要求,本文采用DES和RSA 混合加密算法对传输数据进行加密处理,对算法进行了测试和性能分析,并通过拥塞检测和避免(CODA)模式来保证系统的可靠性。

Abstract
Along with the progress of food inspection technology and the improvement of people’S living standard,people pay more and more attention to the problem of food quality and to effectively ensure food quality and safety has e an important subject in China and the establishment and improvement of food safety traceability system is an important means to availably solve the food safety problems in China.
Food safety traceability system based on includes the central tracing management platform,the city tracing management platform,the food production and processing traceability subsystem,the tracing subsystem of storage and transportation, the wholesale market tracing subsystem and the retrace subsystem of fairgrounds and paper mainly studies on an important part of the food safety traceability system--the retrace subsystem of fairgrounds and supermarket.
