摘要
1987 年4 月肯德基快餐连锁店进入中国市场,揭开了中国现代快餐的发展里程。经过多年的发展,我国经济形态与居民消费结构发生了根本性转变,餐饮业在规模和内部业态构成上都得到了极大的拓展。20 世纪90 年代,我均年增幅在20 %以上,在餐饮大无情经济构成中,快餐产业占餐饮总产值近1/ 3 ,快餐业成为支持餐饮业持续发展的重要力量和新的经济增长点。但我国快餐业起步较晚,发展过程中还有许多不尽人意之处,如何正确引导我国快餐业快速健康的发展,是非常值得关注的问题。
本文则是以沈阳这个城市快餐业为例,沈阳现今的餐饮业在不断的发展和更新。其中快餐业在整个餐饮业的发展中起着举足轻重的作用。快餐是沈阳大众普遍接受的餐饮形式,随着沈阳市民生活水平的不断提高,人们的餐饮消费观念逐步改变,外出就餐更趋经常化和理性化,选择性增强,对消费质量要求不断提高,更加追求品牌质量、品位特色、卫生安全、营养健康和简便快捷。快餐的社会需求随之不断扩大,国内市场的消费大众性和基本需求性特点表现的更加充分。

Abstract
