摘要:对鲜食葡萄采后贮藏过程中以糖为主的可溶性固形物的变化进行了研究,发现葡萄果
实中可溶性固形物随贮藏时间的增加呈下降趋势。利用气相色谱-质谱联用(GC-MS)的方
法对鲜食葡萄采后贮藏过程中糖分的组成及含量进行测定,发现葡萄样品中有葡萄糖、果糖
及少量山梨糖和 L-阿卓糖且含量随贮藏时间的延长而降低。一定贮藏时间后,经 SO2 处理
后的葡萄样品中葡萄糖和 L-阿卓糖的含量低于空白样品,而果糖和山梨糖的含量则稍高于
空白样品,实验结果表明 SO2 处理对贮藏前期葡萄中糖类化合物的降解有抑制作用。

Abstract: In this paper, the change of soluble solid content (SSC) in table grape during storage
was studied at first. The result showed that the content of SSC was deceased with time gone. The
gas chromatography-mass spectrometry (GC-MS) was used to determine ponent and
amount of sugar in table grape. It was find that the most ponent was glucose, then was
