文档介绍:毕业论文 2014 届添加珍珠粉及黄芪对黄酒功效的影响学生姓名学号 10082120 院系生命科学学院专业生物科学指导教师填写日期 2014 年5月 I 添加珍珠粉及中黄芪对黄酒功效的影响摘要在黄酒中加入药食两用的物料,能使中草药在黄酒酿造过程中参与糖化和发酵,产生独特的功能与风味。为开拓黄酒在女性中的消费市场,有必要研究黄酒在美容抗衰老方面的功效。本实验在黄酒酿造的过程中加入珍珠,得到抗氧化能力最好的珍珠粉浓度 1% 。再将此浓度的珍珠黄酒与常见中草药黄芪进行勾兑, 得到珍珠黄芪黄酒。在测定它的抗氧化能力之后发现,添加了珍珠与黄芪的黄酒的抗氧化能力比单纯的黄酒的抗氧化能力要强。关键词黄酒;珍珠粉;中草药;抗氧化 II Effect of adding herbs pearl powder and Chinese medicine2 to Yellow Wine effec t ABSTRACT Adding medicinal and edible materials into rice wine, it can make Chinese herbal medicine participate in harification and fermentation during wine brewing process and then result in special function and flavor. In order to explore rice wine consumer market in female field, it is necessary to study its function of being beautiful and anti-aging. In this experiment, the researcher added pearls into the wine during brewing process for getting 1% concentration of pearl powder which has the best antioxidant capacity. The blending of this pearl rice wine mon herbs of astragalus can be formed pearl astragalus wine.
