摘要:
采购是酒店管理薄弱环节,却是经营关键环节,应当引起酒店服务业重视。酒店采购不仅是订单开出,也含需求确定、供应商选择等。有人视采购为简单工作,认为采购人员只需有伦理道德观,无须有专门化能力。其实,采购工作的复杂性远较其他管理工作为甚,良好的采购不仅可免麻烦,而且可助达成既定目标。分析酒店采购管理找出问题,提出改进具有实际意义。本文根据酒店业的特点,结合现代采购管理理论,对如何优化酒店企业采购管理进行了研究。本文首先分析了酒店行业的发展状况,在此背景下论述了采购在酒店企业中的地位和作用,以及酒店采购的特点和在酒店采购管理中存在的问题。然后论述了现代采购管理理论,以供应链管理思想、供应链中的采购管理以及采购中的委托-代理理论为指导,研究了酒店行业的供应链结构,探讨了酒店企业如何运用供应链管理思想在供应商管理、库存管理和信息化建设三个方面进行采购管理。接着从酒店采购方式、业务流程和内部激励约束管理机制上对酒店采购进行了优化研究。全文试图运用现代采购管理理论,结合酒店的特点对酒店企业的采购管理探索出一般性的规律,从采购的角度增强酒店企业的竞争优势。

Abstract:
Purchasing is the management of hotels weak links and key link is operating, it shall cause hospitality attention. The hotel is not only leave, purchase order contain requirement determination, vendor selection, etc. Some people regard procurement for simple work, think purchasing personnel just have ethical morality, need not have specialized ability. In fact, plexity of purchasing work far more other management work, good sourcing, why not only can avoid troublesome, and can help achieve goals. Analysis hotel purchasing management find out the problems and put forward the improvement with practical significance. According to the characteristics of hospitality industry, combining modern purchasing management theory, how to optimize hotel enterprises purchase management is studied. This paper first analyzes the development status of the hotel industry, discussed in the context of the hotel enterprises purchase in status and role, and the characteristics and the hotel purchasing hotel purchasing the problems existing in the management. Then discusses the modem purchasing management theory and based on supply chain management, supply chain of purchasing management and purchasing the principal-agency theory as the guide, studied the structure of the hotel industry chain, probes into how to use the hotel enterprises supply chain management idea in supplier management, inventory management and informationization of the three aspects p
