新疆部队食堂卫生调查及评价

摘要:目的:为完善部队食堂卫生的监督和管理提出建议。方法:调查57个食堂的卫
生设施和辅助设备,并对餐具、厨具进行了微生物学检测。结果:经过开展创建等级
卫生单位活动,部队食堂的卫生设施和辅助设备有了明显的改善,防蝇、防鼠、消毒
和冷藏设施等基本健全。但也存在一些不容忽视的问题,如炊管人员卫生知识欠缺,
卫生设施使用管理不当,交叉污染现象较普遍,细胞指数均有不同程度的超标。结
论:应普及卫生宣传和教育,进一步加强部队食堂的卫生监督和管理。

Abstract:Purpose:To put forward proposal for perfecting sanitary supervision and management
for canteens of army :The sanitary installations and supplementary equipments in
57 canteens of army units in Xinjiang were assay was carried out to
tableware and cooking :The sanitary installations and supplementary equipments
were obviously improved by promoting the activity to discuss and elect the order and degree of
canteens had all the necessary equipments for fly defense,mouse defense,disinfection
and cold ,there still had some ings to be improved,such as lack of
sanitary knowledge in administrative personnels,incorrect use of sanitary equipments,cross
contamination and hi
