提要
2008 年 9 月以来,美国金融市场风云再起,它的发生使得饭店原有的市场资源
和客户资源逐渐减少,营销管理人才也不断流失。在全球经济危机带来的阴霾还没有
散去的时候,H1N1 病毒悄然来袭,并以不断增加的速度侵蚀着整个经济,它使得经
济复苏需要更加漫长的时间,使得饭店行业新市场拓展成本不断加大,饭店行业这块
蛋糕在甲流和金融危机的冲击下越来越小,竞争越来越激烈。可以看出饭店行业要在
竞争中生存,就必须提高管理水平,降低成本,提高员工的劳动生产效率。就人力资
源管理而言,饭店产业属劳动密集型与资金密集型产业,其活劳动成本较高。经营中
饭店行业具有易进难退的特点,如资本量进入的壁垒较低、技术优势和产品异化不明
显,沉淀成本和劳动力安置成本形成了较高的退出壁垒。因此我国饭店行业要降低成
本、提高竞争优势,人工成本控制在整个饭店成本控制中就显得尤为重要。
然而我国对人工成本的研究起步较晚,针对饭店行业人工成本控制的研究就更
少,本文就是基于上述背景,采用了理论与实际相结合、定性分析与定量分析相结合
的方法,从点的研究延伸到面的研究,以 HD 饭店为研究对象来构建我国饭店行业的
人工成本控制体系。以为饭店行业人工成本控制提供现实可操作的模型,以提高饭店
业的经济效益为目的,进一步探索人工成本的相关理论对饭店行业人工成本控制的指
导意义。

Abstract
The financial crisis shocked the American banking business since the September
2008, its happening makes the hotels’ original market resources and client resources out of
function partly, and the marketing and management talents lost. Now the influence of the
global financial crisis has not gone, the H1N1 virus’ attack speed up the erosion of the
finance, it makes the economic resurgence need more time, the new market enlargement
cost of the hospitality industry is getting bigger and bigger. The cake, the hospitality
industry, is ing smaller and smaller under the shock of the financial crisis and the
H1N1, and the petition is getting more fierce. If the hospitality industry wants
to survive in the petition, it must improve the management, reduce the cost and
increase the staffs’ production efficiency. The hospitality industry belongs to the
labor-intensive and knowledge-intensive industry, the living labor cost is much high. The
capital is easy to get into the industry but hard to get out. So, if our hospitality industry
