摘要:用碱法水解牛毛制备了牛毛水解物,通过凯氏定氮法确定其蛋白质含量为 %。
采用不同实验体系(ABTS、DPPH、羟自由基、双氧水)检测牛毛水解物对不同自由基的
清除作用,并用普鲁士蓝法测定其对三价铁离子的还原能力。结果表明,牛毛水解物对
ABTS、DPPH、羟自由基及双氧水具有显著的清除作用,其半数有效浓度(EC50)分别为
、、 和 ,对三价铁离子表现出较强的还原能力。

Abstract: Bovine hair hydrolysate was prepared by alkaline hydrolysis of bovine hair from leather
industry. The free radical scavenging activity and reducing capacity of the hydrolysate were
evaluated by using various testing systems. The hydrolysates exhibited remarkable antioxidant
activity in scavenging ABTS, DPPH and hydroxyl radicals, as well as hydrogen peroxide, where
the EC50 values were 、、 and , respectively.
Moreover, the hydrolysate presented high reducing power to Fe+3. Our results suggested that
bovine hair could be used as a bioactive protein source for novel usage.
