摘要:本文比较了韩国高丽人参、中国人参(Panax ginseng . Meyer)和西洋参(Panax
quinquefoliu L.)种子油的化学成分及特性。总脂肪酸组成表明,西洋参比亚洲参含有更高
的油酸,其中西洋参含有 %,韩国参 ~%,中国参 %。在甘油三酯的 sn-2
位上,西洋参种子油含有最多的油酸(%)和最少的亚油酸(%)。人参种子油
中最主要的甘油三酯是三油酸甘油酯(OOO)和 1,2-二油酸-3-亚油酸甘油酯(LOO)/1,3-
二油酸-2-亚油酸甘油酯(OLO),此外通过 Rancimat 实验,人参种子油还具有良好的氧化
稳定性,其诱导时间为 ~。这些结果表明,人参种子油可以发展成为一种新的健
康食用油,其化学特性与人参的种类和生长环境密切相关。

Abstract: The seed oils of Asian ginseng (Panax ginseng . Meyer) with different ages grown
in Korea (3, 4 and 5-year old) and China (5-year old), and American ginseng (Panax quinquefoliu
L., 5-year old) grown in China pared on their chemical characteristics. Total fatty acid
composition showed a significantly higher oleic acid content in American (%) than in
Korean (-%) and Chinese ginseng seed oils (%). At the sn-2 position, the highest
oleic acid (%) and lowest linoleic acid (%) were found in American ginseng seed oil.
