Genetically Modified Food
Genetically modified (GM) foods are foods derived from
genetically modified organisms Genetically modified organisms
have had specific changes introduced into their DNa by genetic
engineering techniques. These techniques are much more precise
than mutagenesis(mutation b
reeding) where an organism is exposed to radiation or chemicals to
cre-
ate a non-specific but stable change. Other techniques by which
human
s modify food organisms include selective breeding (plant breeding
and animal breeding), and somaclonal variation.
Types of genetically modified foods
p
Many GM crops have now been developed, including soybean, corn, potato,
canola and cotton. The first recombinant DNA-derived food plant was a tomato
carrying an anti-sense gene to reduce the level of the softening enzyme polyga
acturonase to increase the shelf life of the fruit
2. Animals
The genetic modification of animals can be applied to biomedical research,
modelling of human disease, production of proteins or other substances for the
rapeutive aims, as an alternative source of cell tissues and organs for xenotrans
plantation, and to improve desired features of farm animals and fish, such as dis
ease resistance and food production. Gm fish are currently available, but there are
no food products derived from GM livestock or poultry.
3. Microorganisms
Although GM microorganisms and ingredients produced from them(e, g, GM
chymosin in cheese making) have been available for many years, use of GM ba
cteria and yeasts in foods and in food production has been limited. Many appli
cations are possible, including improvement of t
