摘要:以癸酸、甘油为原料,经硼酸保护双羟基后,酯化反应合成单癸酸甘油酯。研究了催化剂及反应时间对合成的影响,确定了最佳合成条件。抑菌圈法测最小抑菌浓度,结果表明在实验浓度下,单癸酸甘油酯具有很好的抑菌活性。单癸酸甘油酯热稳定性很好,经121℃、30min处理,仍具有良好的抗菌效果。对空气、牛奶中混合微生物也具有良好的抑制性能。

Abstract: 1-Decanoyl-rac-glycerol was synthesized by glycerol and decanoic acid, via protected bi-hydroxy groups by boric acid. The catalyst and reaction time, which influenced the reaction, was studied, and the most favorable condition of synthesis was confirmed. Bacteriostatic circle method measured the minimaI inhibition concentration, the result showd, under the experiment concentrations, 1-decanoyl-rac-glycerol had strong antibacterial capability, and it still had good stability under heat treatment (121℃,30min) . 1-Decanoyl-rac-glycero had good antibacterial properties against some bacteriums in rancid creamery..

甘油单酯作为一种应用广泛的表面活性剂,在食品、化妆品防腐、乳化方面有十分优异的性能,在中性至微碱性条件下仍有很好的抗菌效果,其中单癸酸甘油酯由于具有高活性、低毒性等优点而受到广泛关注[1]。但是国内外关于高浓度单癸酸甘油酯的合成方面的报道为数不多,关于其抑菌作用也未见文献报道。
