我国罐头工业不断发展,在生产、科研、设计等方面取得了丰富的经验,积累了大量技术数据。参考罐头工业专业文献并根据市场需求和原辅材料的季节供应,根据山东轻工业学院下达的年产5000吨蔬菜罐头厂工厂设计课题,做了这个工厂设计。
设计第一章简要的介绍了蔬菜罐头的发展现状及发展趋势。作为本文第2章重点介绍了蔬菜罐头生产工艺,包括原辅材料的供应、产品方案和班产量的确定、罐藏工艺流程以及罐头的检验和储藏。罐藏工艺流程重点介绍了杀菌操作和杀菌理论。对青豆和番茄罐头的工艺进行了介绍。
由于蔬菜罐头生产的季节性和产品的多样性,本文主要介绍了蘑菇和青豆的物料计算,并进行了设备选型。
生产车间对照明、通风、供水、更衣、洗手消毒、冷库、厕所设施以及加工设施等进行了设计。对生产车间用水用气量进行了估算。
辅助部分介绍了化验室、机修间和仓库。
最后一章公用系统介绍了给排水、供电、供汽和制冷。然后画出了全厂平面图、车间平面图、工艺流程图和设备图。
