摘要为了优化碱法提取硒蛋白的工艺条件,在单因素试验的基础上,通过Box-Benhnken中心组合试
验设计及响应面分析方法,考察了碱液浓度、提取温度以及料液比三因素对蛋白质提取率的影响,得出
了硒蛋白提取效果的回归模型。结果表明, mol/L, ℃,料液

Extraction of Selenium-protein from Ziyang Selenium-enriched Tea

Abstract In order to optimize extraction condition of Selenium-protein, according to the analysis method of center
combination test and response surface methodology, the effects of NaOH concentration, extraction temperature
and ratio of solid/liquid on Selenium-protein extraction were studied on the basis of the results of single factor
tests, the regression model of the extraction effect of Selenium-protein was established. The optimum technology
conditions were confi rmed as follows: concentration of NaOH slurry mol/L, extraction temperature ℃,
ratio of solid/liquid 1∶ (g:mL), extracting 3 h each time for 2 times. Under this condition, the yield of Selenium-
protein was % and the content of selenium was μg/g, accounting for % total selenium in tea.
