from storeroom supervisor when ready
Confirm all
items
Sign on requisition
for receiving
Pickup
all items
Bring back
to stewarding area
Issued to stewards
Bring extra items Receive all
to Chief Stewarding items from supervisor
Store all extra items
in stewarding storeroom
Remark: Chemical daily usage to be controlled by chief stewarding.
A minimum and maximum par stock to be established by chief stewarding

CHINAWARE AND GLASSWARE WASHING PROCEDURE

Kitchen Staff Stewards Service Staff
Bring all chinawares Receive all chinawares Deliver all chinawares
and glassware and glasswares to washing area

Dip chinawares and
glasswares in chemical sink
Place all chinaware
into washing racks
Pre-rinse all items
by washing guy
Place the washing
rack into machine
Wash chinawares
through machine
Pickup rack
from machine exit
Remove chinawares
from racks
Let all waterdrop dry
before collectiing
Check each items for
proper cleaned or chips
Place chinawares
on the trolly
Transport Chinawares
to the storage area
Sort chinawares and
glassware by categories
Place chinawares
into by categories
Remark: The shelves for placing all the chinawares to be keep cleaned and monitored by superviosr,
ensure all chinawares to be placed properly and convenient for pick up,
any chiped or cracked wares need to be returned from operation
